At this time yesterday the kitchen was busy with baking, getting the turkey ready for the oven and last minute picking up. Jim and Jody (Harlan's brother-in-law and nephew) shared the meal with us, so it was just the 4 of us for a nice quiet Thanksgiving meal. Of course besides the turkey and stuffing I made sour cream whipped potatoes, candied sweet potatoes, home made cream corn, Gran muffins, cranberry's, jello salad, orange sherbet salad and the relish tray. Jim brought the orange sherbet salad and herring. Of course the after dinner stuffing was the pumpkin pie and bars. Now to walk off the pounds that were put on. I tried a new pumpkin bar and it really was good.
PUMPKIN CHEESECAKE BARS
1 cup flour 1 tsp allspice 1/2 cup packed brown sugar 1 1/2 tsp cinnamon 5 TBSP soft butter 1 tsp vanilla 1/2 cup finely chopped walnuts 1 can solid pack pumpkin 8oz cream cheese 2 eggs lightly beaten 1/4 cup sugar
Combine flour and brown sugar in medium bowl, cut in butter till crumb mixture (remove 1/4 cup for topping) Press remaining mixture into bottom of 8x8 pan. Pat down and bake for 15 minutes at 350 degrees. Cool. Combine remaining ingredients in large bowl. Beat until fairly smooth and pour over baked crust. Sprinkle with reserve crumb topping. Bake 30-35 minutes at 350 degrees, Cool and refrigerate overnight.
